We got up VERY early to watch the sunrise. After all - we can sleep at home anytime. How often do we get a chance to be right on the ocean?

218/365 Our 4th Anniversary!

Today we celebrated 4 years of wedded bliss. We decided to spend the night on Daytona Beach. After getting an amazing priceline.com deal on a room at the Daytona Beach Hilton - we were off.

When we got there - we had an amazing check in experience. Rhonda was so kind and helpful - she upgraded us to an ocean front room with a king size bed. When she found out it was our anniversary - she also gifted us with a complimentary meal at Doc Bales' Grill.

So we were off to our room.

This was the view and the first thing we did - hang out the balcony.

So as soon as we settled in - we were off to explore.

After enjoying the beach for a while, afternoon storms pushed us inside. No big deal - we got some wonderful views.

After dinner, we walked around the hotel and the board walk. We saw this slingshot/bungee jumping/zero gravity thing - and all I can say is NEVER IN A MILLION YEARS!

217/365 Shrimp Scampi

This is a quick dinner that I go to when we don't have anything planned. I keep shrimp in the freezer most of the time and the rest of the ingredients are normally on hand.

Shrimp Scampi

Shrimp Scampi with Sweet Onions

Ingredients

1 whole sweet (Vidalia) onion (chopped into medium size chunks)
1 whole red pepper (chopped into medium size chunks)
3 whole cloves of garlic
2 tbsp Butter
Olive Oil
3 tbsp Lemon Juice
Shrimp
Linguine

Chop onion in to medium size pieces. Saute in pan over medium high heat with butter and add 1 tbsp of Olive Oil. Dice garlic and add to onions. When onions are beginning to be translucent, add chopped red peppers. Add more olive oil if needed.

Stir while it is cooking.

Add shrimp. I normally do 6 medium shrimp per person. Add lemon juice.

Cook until shrimp is done.

Prepare linguine according to directions on box.

Serve shrimp mixture over pasta and crusty bread.
