94/365 Easter 2010

It's Easter and we celebrated by going to a church who held one large service outside. We brought our own chairs, settled on the lawn with a bunch of people and had a great time.

They had some guys take an aerial shot - but they balanced them with no restraints on the tines of a forklift and then drove it around! Very dangerous.

After the service - everyone got to admire the cupcakes people brought for a cute cupcake competition.

203/365 Margarita Cupcakes

Margarita Cupcakes with Lime Butter Cream Frosting - so yum!



1 box White Cake Mix (butter Flavor)
10 ounces Frozen Margarita Mix
8 tablespoons Unsalted Butter, Softened
1 tablespoon Lime Zest
6 tablespoons Unsalted Butter, Softened
6 tablespoons Cream Cheese (Softened)
2 tablespoons Lime Juice
2 teaspoons Lime Zest
4 cups Confectioner's Sugar

Mix together 8 tbsps of butter, egg whites 10 oz (thawed) container of margarita mix and 1 tsp lime zest. Add White Cake Mix to the mixture. Beat on a low speed for 30 seconds, then beat on medium speed for 2 minutes.

Using an ice cream scoop, spoon cake batter in to greased or lined cupcake pans. Bake for 18-20 minutes at 325.

While cupcakes are baking, make frosting:

Cream 6 tbsp of butter and 6 tbsp of cream cheese on a low speed until light and fluffy. Add line juice and lime zest and continue to beat. Slowly add confectioners sugar - one cup at a time.

I live in a humid, warm environment - so I let my frosting cool in the fridge for a while before spooning it into an icing bag.

When cupcakes are done, let them cool in the pan for about 10 minutes before removing them.

Let cupcakes thoroughly cool before icing them.
